How to Make Spam Musubi Quiche Pie

Spam musubi is one of my favorite guilty pleasures from the Islands. Carb-loaded, greasy, salty, and sticky, spam musubi just make me happy.

I was invited to my friend Michael's annual birthday pie extravaganza, where the cost of entry is a homemade pie. It's a fantastic celebration of everything pie, with people going all out to share some amazing sweet and savory pies. Michael alone makes four different pies for the occasion!

I somehow got into my head that I was going to make a spam musubi pie, even though I had never made a pie before in my life. It took a bit of prototyping, but I'm quite happy with the result. The key is to make a layer of sticky, short grain rice, then a layer of fried spam. I added some Asian veggies for added flavor. Then pour the egg mixture on top. And sprinkle with seaweed furikake flakes at the end, to give it that musubi vibe.

The party guests seemed happy with it, since I didn't have any to take home. And it won "honorable mention" among some extremely tough competition!

Anyway, here's my recipe for Spam Musubi Quiche Pie.

Spam Musubi Quiche Pie Recipe

Ingredients

  • 1/2 can of Spam, cut up into thin slices or rectangles
  • 3 stalks of green onions, cut very small
  • 2 cloves garlic, minced
  • 4-5 stalks of Chinese broccoli, cut into small bits
  • 1 cup short grain rice
  • 1/2 Tbsp fish sauce
  • 1 Tbsp szechuan chili sauce
  • Salt and pepper
  • 4 eggs
  • 1 cup of half and half
  • Furikake to taste
  • Homemade pie crust (I used this recipe) or store-bought if you absolutely must

Instructions

1. Cook rice.

2. In a large pan or wok, fry the spam until its nicely browned, then remove from pan.

3. Stir-fry garlic and green onions in wok until fragrant, under a minute.

4. Add broccoli and stir-fry for a couple of minutes, until the leaves start to cook down.

5. Return spam to pan and mix.

6. Reduce heat to low, then add fish sauce, chili sauce. Remove from heat.

7. Whisk together the eggs, half and half, a teaspoon of salt, and half a teaspoon of pepper in a large bowl.

8. Add thin layer of rice on top of pie crust.

9. Add stir fry mixture to pie crust on top of the rice.

10. Pour egg mixture over stir fry.

11. Bake in oven at 350 for about 40-45 minutes.

12. Remove from oven and let rest for at least 10 minutes.

Sprinkle furikake flakes liberally on top before serving. Keep container nearby, if people want more.

Postscript: I had some leftover quiche fixings, so I mixed it all up and put them into cupcake tins and baked them for 30 minutes and 350 degrees. They made these yummy mini-quiches that I'm going to freeze to use on days when I'm feeling lazy. Just heat them up for 15 minutes  in the oven when you are ready to eat them!
