I will be the first to admit that I am not a good cook. I don’t plan well, get frustrated by recipes with more than four ingredients, and don’t have the patience for dishes that take more than 30 minutes to prepare.
That said, I nailed tonight’s dinner: chicken breast with coconut mole sauce (from a jar), baked acorn squash, garlicky collard greens and brown rice. Delicious, nutritious, and super easy to prepare.
