I had a really nice time with the Santos clan enjoying the company of the extended family on my mom's side. As usual we had a ridiculous spread of food for the 20-some guests, including both American traditional favorites and festive filipino dishes.
Among the main course offerings: juicy turkey made by my sister, lovingly roasted winter veggies by me, pancit palabok noodles, chicken divan, chinese chicken salad, pork ribs, fried fish cakes, vietnamese egg rolls, fried prawns, green beans, cornbread stuffing, cranberry sauce, and a few other dishes I'm forgetting. Of course, no filipino meal is complete without a couple of scoops of white rice.
Did I mention dessert? We had ube pudding, maja blanca corn pudding, chocolate peanut butter squares by my mom, pumpkin and custard pies, and fried bananas.
I did my best to not totally overindulge, but I think an extra slice of pumpkin pie, pancit palabok and Cori's turkey might have made it onto my second plate. Hey, it's the holidays!
