I love my Chemex coffee maker

Mole inspects my new chemex coffee makerAfter getting two of the best cups of coffee ever from both my friend Paul and from Sightglass Coffee in San Francisco made from a Chemex coffee maker, I resolved to get one for myself for my birthday.

Going against the increasing technification of the coffee process,the Chemex boils down coffee brewing to its essence: good beans, well ground, put in a fine filter, combined with boiling water. Honestly there is no huge difference between a Chemex and your standard coffee maker.  But it does allow you to focus on every step of the process:

  1. Boiling the water to just the right temperature,
  2. Grinding the beans to just the right fineness,
  3. Choosing a filter that removes as much of the bitterness as possible while allowing the flavor to come through,
  4. Reducing the amount of time that the boiling water and the beans interact,
  5. Not allowing the coffee to sit in a heated container for too long — this increases the acidity as times goes on.

Because it’s transparent, you see the whole process happen before your eyes.  It’s kind of awesome and Zen.
