Ingredients
- 16 ozs of mascarpone (typically 2 8 oz containers)
- 6 eggs
- 4 or so bags of lady fingers
- Rum
- Two cups of coffee
- 2 heaping tablespoons of sugar
- Chocolate powder (optional)
Instructions
Split the egg whites and egg yolks. Mix the egg yolks and mascarpone and two tablespoons of sugar. Beat the egg whites until peaks are still – slowly fold into the egg yolk / mascarpone mixture. Add sugar to taste (I don’t make this very sweet, because the lady fingers already have a crap ton of sugar).
Pour coffee into a shallow bowl. Add one tablespoon of rum (or more to taste). Dip lady fingers one at a time and quickly line up on Bottom of a pan. Add enough mascarpone mixture to provide a nice layer on top of first layer of cookies. Repeat with a second layer of lady fingers, then mascarpone. Let set in fridge overnight. Dust with a layer of chocolate powder.
Normally this makes enough for like a 9×13 baking pan, and then some.
